JERUSALEM ARTICHOKES
Caulifl ower & Jerusalem
Artichoke Soup
INGREDIENTS
- 1 onion
- 2 ribs of celery
- 2 cloves of garlic
- ½ tbsp light olive oil
- 500g (1lb 2oz) Jerusalem artichokes
- 1 head of caulifl ower
- 1 litre (4¼ cups) low-sodium vegetable stock
- freshly chopped herbs, to garnish
SERVES: 4
PREP TIME: 10 MINUTES
COOKING TIME: 30 MINUTES
- Finely chop the onion, celery and garlic and
add to a large soup pan with the light olive oil
over a medium heat. Lightly fry for 5 minutes. - Peel the artichokes and chop into small
pieces and roughly chop the caulifl ower. Add
both to the pan along with the vegetable stock. - Cover the pan and simmer for 20 minutes or
until the artichokes are tender. - Blend the soup until it’s velvety smooth and
season to taste before serving, garnished with
herbs.
