Potato & salmon salad with
mustardy dressing
Prep + cooking time: 45mins. Serves 8.
1kg kipfl er potatoes, scrubbed,
halved lengthways
1.5kg side of salmon, skin on,
pin-boned
½ tsp sea salt
½ cup fi nely chopped fresh mint


¼ cup fi nely chopped fresh chives
1 tbsp fi nely grated lemon zest
2 tbsp olive oil
170g asparagus, trimmed, halved
on a diagonal
1 tbsp drained baby capers
1 tbsp fi nely chopped cornichons


1 medium avocado
Mustardy dressing

(^1) / (^3) cup (80ml) extra-
virgin olive oil
2 tsp fi nely grated lemon zest
2 tbsp white-wine vinegar
1 tbsp dijon mustard
Serving herbs
1 cup loosely packed
fresh mint leaves
2 tbsp chopped fresh chives
2 tbsp fresh baby nasturtium
