Raclette
This dish was concocted by
cow herders way back in 13th
century Switzerland. Dunk
boiled potatoes into a wheel
of heated, oozing Swiss cheese
(also called Raclette) and serve
with cured meats and pickles.
Oh baby!

Baked brie
Preheat your oven to 200°C
(180°C fan-forced). Cut the brie
horizontally across the top of
the wheel, removing the top
rind. Place garlic and rosemary
inside, and place rind back on
top. Bake for 15 minutes and
dip with water crackers.

Mac and cheese
The ultimate American comfort
food has stepped out of the
packet and onto the menus at
plenty of hipster restaurants.
For a quick, crazy-basic three-
ingredient recipe, cook two
cups of macaroni in four cups
of full-cream milk, then stir in
two cups of grated cheese.

BECAUSE,

CHEESE

It’s not just our wardrobes throwing
back to the disco-ball decade but
our kitchens, too. Introducing fi ve
delicious ways with cheese, courtesy
of the flower-power era

Cheese fondue
This is heaven on a stick! Simply
melt some cheese (usually a blend
of two cheeses such as gruyère and
cheddar with wine, herbs and garlic
added) and serve in a communal
pot. Grab yourself a skewer, put
some bread on the end and dip
away to your heart’s content.

Cheese makes
everything in life
better. Fact.

Cheese and
pineapple hedgehog
Say whaaat? These were the
table centrepiece at every party
in the ’70s. Halve a rockmelon
and place fl at-side-down, cut
cheddar cheese and pineapple
into cubes, thread onto cocktail
sticks and push into the melon.
