Know your timing. If you’ve
chosen a huge bird, it’s
going to take longer to cook.

Hydrate. Adding some
water to the bottom of the
roasting pan will keep your
turkey moist as it cooks.

To get that brown finish
on the outside, it’s all about
rubbing the skin with butter
or oil. If you want to get really
