CACAO PROTEIN MUFFINS

INGREDIENTS


  • 1 cup quinoa flour

  • 1 cup almond meal

  • 1⁄2 cup cacao powder

  • 1 tsp baking powder (gluten-free)

  • 1 scoop protein powder, preferably

  • WPI (whey protein isolate)

  • 1⁄2 cup coconut oil

  • 2⁄3 cup almond milk

  • 1⁄2 cup agave syrup

  • 1 tsp vanilla extract

  • 2 eggs

  • Almond icing

  • 3 tbsp almond spread

  • 1 tbsp cacao powder

  • 1⁄8 teaspoon of stevia

  • 3 tbsp hot water, more if needed

  • Cacao nibs, if desired


METHOD
PREHEAToven to 180oC (350oF).
Greaseamuffintray.
SIFTquinoa flour, almond meal, cacao
powder and baking powder into a
bowl.
ADDprotein powder, coconut oil,
almond milk, agave and vanilla and
mix well.
INa separate bowl, crack both eggs
andwhiskuntilcombined.Addto
the mixing bowl and combine all the
ingredients until smooth.

SPOONmixtureintoamuffintrayand
bake in the oven for 20 minutes.
REMOVEand stand for 5 minutes, then
remove from muffin tray. Cool.
MEANWHILE,to make the almond
icing,mixalltheingredientsinasmall
bowl and stir until smooth. Spread over
cool muffins.

Grab a silicon muffin tray for
ease of removal.
