ROASTBEEF&WATERMELON
SALAD
Ready in 15 minutes • Makes 4 servings
4cupsrocket
500g watermelon, cut into chunks
½ red onion, thinly sliced
116g fat-free feta cheese
450g cooked roast beef, sliced
¼ cup red wine vinegar
¼ cup olive oil
¼ cup lemon juice
1 garlic clove, crushed
1 tsp dried parsley

1.Combine first five ingredients in a
large bowl.
2.Inasmallerbowl,whisktogether
remaining ingredients to make dressing.
3.Pour dressing over salad and toss to coat.
