CHEAT’S
ROAST CHOOK
WHAT YOU NEED
1 medium free-
range chicken
1 large onion, chopped
1 bay leaf
3 sprigs fresh thyme
1 tsp black pepper
1 tsp white pepper
1 tbsp olive oil
MAKE IT
Preheat oven to 200 ̊.
Place chicken in a large
pot of salted water
with onion, bay leaf,
thyme and pepper.
Bring to the boil and
simmer for one hour.
Drain the chicken and
season with salt, freshly
ground white pepper and
olive oil. Roast in oven at
200 ̊ for 15-30 minutes.
Take out of the oven
and leave to rest for
15 minutes before
carving and serving.
Serve with roast veg
of your choice, and
lashings of gravy...
