Honey, ginger and lemon sparkler
Put ½ cup classic honey, ¼ cup thinly sliced ginger and
1 cup water in a small saucepan over a medium heat.
Bring to the boil then reduce to low. Simmer for 5 minutes
then remove from heat and set aside to cool completely.
Stir in juice of 3 lemons and pour mixture into a large
jug. Top with ice cubes and fill with soda water. Serve
garnished with mint leaves and lemon slices. Serves 4.
