Melt-and-mix honey cake
Preparation time: 20 mins
plus 25 mins cooling
Cooking time: 40 mins
Serves 10

Cooking oil spray, to grease
200g unsalted butter, melted
¾ cup caster sugar
½ cup classic honey, plus
extra, to drizzle
3 free-range eggs, lightly beaten
¾ cup Greek-style yoghurt
Finely grated zest of 1 lemon*
1¾ cups self-raising flour
Edible flowers, to serve*

HONEY ICING
½ cup icing sugar mixture
2 Tbsp classic honey
20g unsalted butter, melted

1 Preheat oven to 160°C. Spray
base and sides of a 24cm-wide
11cm-tall (with 5cm centre ring)
bundt tin with cooking oil.
2 Pour butter into a large bowl. Add
sugar, honey, eggs, yoghurt and zest. Use
a hand whisk to combine until smooth.
3 Sift in flour then stir until just
combined. Spoon into prepared tin,
smooth surface and bake for 40 minutes
or until cooked when tested with a
skewer. Set aside in tin for 10 minutes to
cool slightly. Turn out onto a wire rack
for 15 minutes to cool if serving warm
or set aside on rack to cool completely.
4 Just before serving, to make honey
icing, sift icing sugar into a medium

bowl. Stir in honey and melted butter,
mixing until smooth. Stir in 1 tsp hot
water. Drizzle icing over warm or cooled
cake. Drizzle with a little extra honey
and garnish with edible flowers to serve.

Honey miso-glazed salmon
Preparation time: 15 mins
Cooking time: 15 mins
Serves 4

½ cup white miso paste (find in
Asian aisle of supermarkets)
¼ cup manuka honey
½ tsp sesame oil
270g soba noodles
2 green shallots, very finely chopped
1 Tbsp light soy sauce
2 tsp extra virgin olive oil
4 x 120g skinless, boneless
salmon fillets
2 Tbsp lime juice
Steamed broccolini, to serve
Sesame seeds, to scatter
Lime wedges, to serve

PICKLES
3 baby lebanese cucumbers,
very finely sliced
¼ red onion, very thinly sliced
¼ cup pickled ginger,
1 Tbsp pickled ginger liquid
1 Tbsp rice wine vinegar

1 Combine all pickle ingredients
in a medium bowl and set aside.
2 Put miso, honey and sesame oil in
a medium jug. Mix then set aside.

instructions. Drain, transfer to a large

work beautifully in this cake
to balance out the natural
sweetness of the honey.
n Edible flowers are available
in large greengrocers such as
Harris Farm Markets, as well
as local farmers markets. Try
purple and white edible viola.

Honey, sage and
bacon roast chicken
n You can use 8 chicken
thigh cutlets instead of
4 marylands if you prefer.
Just up the streaky bacon
from 4 to 8 rashers.
n If thyme or rosemary are
growing rampant in your
herb garden, you can swap
them for the sage – any
woody herb will work well.

spoon batter into 12 holes
in Step 3 and omit Step 4.
