HERB & GARLIC


BAKED BRIE IN A BOX


PREP + COOK TIME 30 MINUTES SERVES 8


2 x 200g wheels of brie in
a wooden box
1 clove garlic, unpeeled,
bruised
2 teaspoons olive oil
2 fresh bay leaves
2 x 10cm stems fresh rosemary
Fresh honeycomb, to serve


GARLIC CROSTINI
½ cup (125ml) olive oil
3 cloves garlic, crushed
2 teaspoons chopped fresh
thyme
1 french bread stick (500g),
cut into 1cm−thick slices
on the diagonal


1 Preheat oven 200°C/180° fan.
2 Make garlic crostini.
3 Meanwhile, open brie boxes and
remove plastic wrapper. Line base
and side of box with baking paper,
extending the paper 1cm above the
side. Return brie to box. Score surface
of brie in a crisscross pattern at 2cm
intervals, 1cm deep. Pull scoring
apart; insert garlic. Pour oil over brie;
season. Carefully hold the bay leaves
and rosemary under hot running
water for 30 seconds to release the
flavour, then pat dry with paper towel;


place on brie. Replace the box lid.
Wrap kitchen string around box
several times to secure.
4 Bake brie for 15 minutes or until
cheese melts. Remove from oven;
carefully remove lid.
5 Serve brie immediately with garlic
crostini and honeycomb.

GARLIC CROSTINI
Oil and line an oven tray with baking
paper. Combine oil, garlic and thyme
in a small bowl; season to taste. Place
bread, in a single layer, on tray; brush
one side with oil mixture. Bake for
8 minutes or until golden and crisp.

NOTES


HERB & GARLIC BAKED
BRIE IN A BOX
If you can’t find brie in
a box, place brie in a
small ovenproof dish;
bake, covered with
baking paper and foil.
If the brie becomes firm
on standing, return it to
the oven for 3 minutes.
You can use camembert
instead of brie.
