X16 king prawns, peeled,
de-veined, heads
removed and tails
still intact (or whole,
if you prefer)
XSalt and freshly ground
black pepper
XExtra virgin olive oil
X1 red chilli, de-seeded and
finely chopped
X1 large zucchini, finely
sliced lengthways
X4 wholemeal pita breads
X1 large mango, peeled and
roughly chopped
XZestandjuiceof1lemon
XDressing suggestion:
dollop of coconut yoghurt

1.Place the prawns in a dish.
Season with salt and pepper
anddrizzlewitholiveoil.
2.Frythechilliin3tbs
oliveoiloveraverylow
heat for about 3 mins.
Set aside to allow the
chilli to infuse.
3.Grill the prawns on
abarbecuefor4–6mins,

X50gpecannuts,broken
into pieces
X120g good-quality blue
cheese,loosely crumbled
X100g rocket
XJuiceof½lemon

classic French vinaigrette

1.Warm the burghul wheat
and1tbsoliveoiloveralow
heat. Add 400ml water and
bringtotheboil.Reducethe
heatandsimmerwithalidon
for15minsuntilthewheat
puffsup.Separatethegrains
with a fork and leave to cool.

grains. We like:

Quinoa Steamed
