METHOD
Step 1 This freshtakeon
a family favourite is loaded
with vitamins to fight off any
germs around the gym floor/
office.Heatadashof oil ina
skillet, then soften the onion
and peppers. Remove and
place in a mixing bowl.
Step 2 Soften the potatoes
in thepan, drizzled with olive
oil, then remove and place
with your veg. Now fry the
sausages in the pan for five
minutes. As they brown,
crumble them with a spoon.
Re-add the vegetable mix.
Step 3 While that cooks,
whisk the eggs, milk, salt,
pepper and thyme. Pour into
a dish with the sausage and
veg, then bake for 20-25
minutes. Sprinkle with spring
onion and spinach and divide
into Tupperware. Or dig in.

  • A red pepper, diced

  • A green pepper, diced

  • An onion, diced

  • Extra-virgin olive oil

  • Sweet potatoes, 2, in chunks

  • Quality beef sausages, 500g

  • Eggs, 8, medium

  • Almond milk, ⅓ cup

  • Himalayan salt, 1tsp

  • Fresh black pepper, ½tsp

  • Thyme, 1tsp

  • Spring onions, handful, chopped

  • Spinach, handful, chopped
