iced vovo cheesecake pops
let’s go! makes8|prep 15 mins (+ 6 hours freezing time)

2 x 250g pkts Arnott’s Iced VoVo
Biscuits
200g butter, melted, cooled
2x250gpktscreamcheese,
at room temperature
80g (^1 ⁄ 2 cup) icing sugar
mixture
2tspvanillaextract
600mlctnthickenedcream
Pink food colouring, to tint
(we used Wilton Icing Colors
Rose Paste)
4tbsraspberryjam
Desiccated coconut,
to sprinkle

1 Process the biscuits in a food processor
untilcoarselycrushed.Addthebutterand
process until well combined. Set aside.
2 Useelectricbeaterstobeatthecream
cheese,icingsugarandvanillainabowl
until smooth. Gradually add the cream and
beat for 1-2 minutes or until well combined
and thickened slightly.
3 Spoonathirdofthemixtureintoa
separatebowlandsetaside.Beatalittle
food colouring into the remaining mixture
untilbrightpink.Transferhalfthe pink
mixturetoaseparatebowl.
4 Fold2tbsjamintooneportionofpink
mixturetocreatearippledeffect.Divide
the pink mixture evenly among eight
300ml paper cups.

5 Sprinkle2tspofthebiscuitmixtureinto
eachcup,pushingitupagainsttheside
ofthecupslightly.Dividethereserved
white mixture evenly among the cups.
Repeat with another layer of biscuit mixture,
using 2 tsp for each cup.
6 Fold the remaining 2 tbs jam into the
remaining pink mixture to create a rippled
effect.Divideevenlyamongthecups.Top
with the remaining biscuit mixture, pressing
down slightly with the back of a spoon so
the pops are well covered.
7 Insertapaddle-popstickintothecentre
ofeachcup.Placepopsinthefreezer,stick
sideup,for4-6hoursoruntilfrozen.
8 Carefully cut away cup from each pop
and remove. Sprinkle pops with coconut.
