CHICKEN WINGS
WITH BROCCOLI RICE
PREP + COOK TIME 1 HOUR SERVES 4

2 tablespoons salt−reduced soy sauce
3 cloves garlic, crushed
2 tablespoons finely chopped fresh
lemon grass
1 teaspoon caster sugar
1 tablespoon peanut oil
2kg chicken wings, tips removed
20g piece fresh ginger, cut into
thin matchsticks
500g broccoli, chopped finely
⅓ cup loosely packed fresh coriander
sprigs

GINGER DIPPING SAUCE
20g piece fresh ginger, cut into
thinmatchsticks
1 small clove garlic, crushed
1½ cups (375ml) salt−reduced
chicken stock
1 tablespoon salt−reduced soy sauce

GREEN ONION BROTH
2 cups (500ml) salt−reduced
chicken stock
2 green onions, sliced thinly
on the diagonal

1 Preheat oven to 200°C/180°C fan.
Oil two large shallow oven trays; line
with baking paper.
2 Combine soy sauce, garlic, lemon
grass, sugar and oil in a medium
bowl, add chicken; toss to coat
chicken in mixture. Divide chicken, in
a single layer, between oven trays; top
with ginger. Roast for 40 minutes,
basting with cooking juices twice
during cooking, or until chicken is
browned and cooked through.
3 Meanwhile, make ginger dipping
sauce, then green onion broth.
4 Process broccoli, in batches, until
finely chopped and resembles rice
grains. Blanch in a medium saucepan
of boiling water for 20 seconds; drain.
Spread on paper towel to dry; season.

PORK CUTLETS WITH
SWEET & STICKY APPLE
PREP + COOK TIME 35 MINUTES SERVES 4

We used red apples in this recipe, but
green apples would also work well.

2 tablespoons olive oil
4 x 235g pork cutlets
4 medium red apples (600g), unpeeled
1 tablespoon soy sauce
4cm piece fresh ginger (20g),
grated finely
2 tablespoons brown sugar
2 teaspoons finely grated orange rind
1 cup (250ml) freshly squeezed
orange juice
1 medium radicchio (200g), trimmed,
leaves separated

1 Heat half the oil in a large frying
pan over medium heat; cook pork for
5 minutes each side or until browned
and cooked through. Remove from
pan; cover to keep warm.
2 Cut apples in a variety of ways:
sliced, halved, quartered and also
in wedges.
3 Heat remaining oil in the same
frying pan over high heat; cook apple,
turning occasionally, for 4 minutes
or until just tender and still holding
its shape. Remove from pan.
4 Add soy sauce, ginger, sugar,
rind and juice to same pan; bring
to the boil. Reduce heat; simmer
for 5 minutes or until the sauce
thickens. Return the apple to pan;
toss to coat in sauce.
5 Serve the pork and radicchio with
apple, drizzled with remaining sauce.

5 Pour warm green onion broth
into serving cups. Serve broccoli
rice topped with chicken, coriander
and ginger dipping sauce.

GINGER DIPPING SAUCE
Combine all the ingredients in
a medium bowl.

GREEN ONION BROTH
Heat stock in a small saucepan until
warm; stir in green onions.
