4 GREEK-STYLE DRESSING
PREP TIME 5 MINUTES MAKES 1 CUP (250ML)

Combine 3 cloves crushed garlic, ⅔ cup (160ml)
lemon juice, ¼ cup (60ml) olive oil, 2 tablespoons
fresh oregano leaves and 2 teaspoons fresh lemon
thyme leaves in a small bowl. Season to taste.

SERVING SUGGESTION
Serve with lamb, beef, chicken, pork and seafood salads.

5 BALSAMIC DRESSING
PREP TIME 5 MINUTES MAKES ½ CUP (125ML)

Combine ⅓ cup (80ml) oliveoil, 2 tablespoonsbalsamic
vinegar and 1 clove crushed garlic in a bowl. Season to taste.

SERVING SUGGESTION
Serve with lamb, beef and roasted−vegetable salads.

6 THYME VINAIGRETTE
PREP TIME 5 MINUTES MAKES ½ CUP (125ML)

Place ¼ cup (60ml) olive oil, ¼ cup (60ml) white wine
vinegar, 2 teaspoons fresh lemon thyme leaves and
2 cloves crushed garlic in a screw−top jar; shake well.
Season to taste.

SERVING SUGGESTION
Serve as a salad dressing, or with asparagus or beef.
