APPLE & PEPITA


PREP TIME 20 MINUTES (+ REFRIGERATION)
MAKES 35

1 cup natural sliced almonds,
finely chopped
200g pitted medjool dates, chopped
50g coarsely chopped dried apple
¼ cup shredded coconut
½ cup pepitas (pumpkin seeds)
2 teaspoons hot water, approximately
1 cup shredded coconut, extra

1 Process almonds until finely
chopped. Add dates, dried apple,
shredded coconut and pepitas;
process until well combined. Add
the water; process until the mixture
comes together.
2 With damp hands, roll 2 level
teaspoons of mixture into balls. Roll
balls in extra shredded coconut to
coat; place on an oven tray lined with
baking paper. Refrigerate for 1 hour.
