TOFFEES ON STICKS
PREP + COOK TIME 30 MINUTES (+ STANDING)
MAKES 12

6 wooden ice−block sticks
1½ cups (330g) caster sugar
½ cup (125ml) water
1 tablespoon malt vinegar
Hundreds & Thousands

1 Grease a 12−hole (1−tablespoon/
20ml) mini muffin pan. Using kitchen
scissors, cut the ice−block sticks in
half crossways.
2 Combine sugar, the water and
vinegar in a medium saucepan; stir
over low heat for 2 minutes or until
sugar dissolves. Bring to the boil;
boil, uncovered, without stirring, for
10 minutes or until mixture reaches
154°C on a sugar thermometer (or
until a small amount of mixture “cracks”
when dropped into a cup of cold water).
3 Remove from heat; allow bubbles
to subside. Pour toffee mixture into
pan holes; sprinkle with Hundreds
& Thousands.
4 Stand toffees for 10 minutes;
place ice−block sticks, cut−side down,
into centre of toffees. Stand toffees
at room temperature until set.

TAG YOUR TREATS
Labelling your treats with homemade tags is a great way to display

effort. List the ingredients on the back of the tag, so that people
know exactly what you’ve put into your creation. Or, if it’s a gift for a
friend, write a little poem or personalised note to tell them what they
mean to you. That way, even once they’ve gobbled up your tasty gift,
they have the tag as a forever memento.
