Alfresco Mains


SPICED CHICKENS
WITH GREEN RICE
PREP + COOK TIME 45 MINUTES
(+ REFRIGERATION & STANDING) SERVES 4

2 x 500g fresh whole chickens
2 tablespoons ras el hanout
1 teaspoon dried chilli flakes
1 teaspoon dried mint flakes
3 cloves garlic, crushed
2 tablespoons extra virgin olive oil
40g butter
8 green onions, chopped
3 cloves garlic, extra, crushed
450g packet microwave long−grain
white rice
¼ cup fresh coriander leaves
300g pomegranate seeds
(see cook’s note)
lemon wedges, to serve

YOGHURT SAUCE
1 cup (280g) greek−style natural
yoghurt
1 teaspoon ground sumac
2 tablespoons chopped fresh coriander
1 tablespoon lemon juice

1 Placechickens, breast−sides−down,
on a board. Using kitchen scissors,
cut along either side of backbone.
Discard backbones. Turn breast−side
up; cut along breast bone to cut in
half. Place chickens in a large dish.
2 Combine ras el hanout, chilli,
mint, garlic and oil in a small bowl;
rub over chicken. Cover; refrigerate
for 2 hours.
3 Cook chickens, skin−sides
down, on a heated, oiled grill plate
(or grill or barbecue) over medium
heat, covered loosely with foil, for
8 minutes or until well browned.
Turn; cook, covered loosely with foil,
for 12 minutes or until cooked through
(reduce heat to low if browning too

quickly). Transfer chickens to a tray;
season to taste. Stand, covered loosely
with foil, for 10 minutes.
4 Meanwhile, make yoghurt sauce.
5 Melt butter in a large frying pan
over medium−high heat; cook green
onion, extra garlic and rice, stirring,
for 3 minutes or until heated through.
Season to taste. Stir in coriander.
6 Spoon rice mixture onto serving
plates; top with chicken and yoghurt
sauce. Sprinkle with pomegranate
seeds. Serve with lemon wedges.

Combine ingredients
ina small bowl; season
to taste.
