VISIONS OF SUGAR PLUMS
Christmas is a time for gift-giving and delicious food, and this recipe
by Silvia Colloca is a perfect combination of the two. For more edible

Sterilise three 400ml jars and keep in hot water until ready to use.
For the pickling liquid, place 1L white wine vinegar, 1L water, 2 tbsp
mixed peppercorns, 2 tbsp fennel seeds, 3 bay leaves, 1 cup (220g)
granulated sugar and 2 tbsp table salt in a medium saucepan. Bring
to simmer, then boil gently for 4-5mins or until sugar has dissolved.
Place 1kg sugar plums in (still hot) sterilised jars and cover them with
hot pickling liquid. Seal firmly with the lid, then turn jars upside down
until cool to create a vacuum. The plums will keep, unopened, for
6 months. Once opened, store in the fridge for up to 2 weeks.Stay in touch
