Feeling saucy


Cocktail Sauce
MAKES 1½ cups
PREP 5 minutes

½ cup mayonnaise
½ cup thickened cream
2 tablespoons tomato sauce
1 tablespoon lemon juice
Few drops of Tabasco sauce,
to taste

Whisk mayonnaise, cream,
tomato sauce, juice and
Tabasco in a bowl until
combined.

Lemon Aioli
MAKES ¾ cup PREP 5 minutes

¾ cup egg mayonnaise
1 lemon or lime, zested, juiced,
2 cloves garlic, crushed

Whisk mayonnaise, zest, juice and
garlic in a bowl.

Salsa Verde
MAKES ¾ cup
PREP 10 minutes

2 tablespoons capers,
finely chopped
2 tablespoons chopped
flat-leaf parsley
2 tablespoons chopped dill
2 anchovy fillets, finely
chopped
1 tablespoon lemon juice
1 tablespoon light olive oil
1 tablespoon wholegrain
mustard
1 teaspoon finely grated
lemon zest

Combine the capers, parsley,
dill, anchovies, juice, oil,
mustard and zest in a bowl.

+ LEMON AIOLI Use with potato
wedges, grilled beef or lamb.
+ COCKTAIL SAUCE Use with
cooked prawns, or toss through
a coleslaw salad.
+ SALSA VERDE Toss through
a bean salad, or use it with grilled
pork or chicken.
+ TARTARE SAUCE Use with fried
or grilled fish, prawns or calamari,
or toss through a potato salad.
+ HONEY & SOY SAUCE
Use with grilled lamb, chicken
or baked pumpkin.
+ TOMATO & BASIL SAUCE
Use with grilled chicken, fish or prawns.
