Tartare Sauce
MAKES 1 cup PREP 10 minutes
½ cup mayonnaise
2 tablespoons sour cream
1 tablespoon lemon juice
1 tablespoon chopped gherkins
1 tablespoon chopped capers
1 tablespoon chopped stuffed
olives
2 teaspoons chopped dill
Whisk mayonnaise, sour cream
and juice in a bowl. Stir in the
gherkins, capers, olives and dill.
Honey & Soy Sauce
MAKES ¾ cup PREP 10 minutes
1 tablespoon lime juice
2 green onions, finely chopped
1 tablespoon coriander leaves
1 tablespoon sesame oil
1 tablespoon soy sauce
2 teaspoons honey
2 teaspoons sesame seeds, toasted
2 teaspoons grated ginger
Combine the juice, onion, coriander,
sesame oil, soy sauce, honey, sesame
seeds and ginger in a bowl.
Tomato & Basil Sauce
MAKES 1½ cups PREP 10 minutes
COOK 10 minutes + cooling
2 teaspoons olive oil
½ red onion, finely chopped
2 cloves garlic, crushed
400g can diced tomatoes
¼ cup basil leaves
1 teaspoon balsamic vinegar
1 Heat oil in a frying pan
over moderate heat. Add
onion and garlic; cook and
stir for 5 minutes or until
soft. Add tomatoes; simmer
for a further 5 minutes
or until mixture thickens
slighty. Cool.
2 Transfer tomato mixture to
a food processor. Add the basil
leaves and balsamic; process
until almost smooth.
