500g chicken mince
½ cup dried packaged
breadcrumbs
¼ cup chopped flat-leaf parsley
2 green onions, sliced
1 teaspoon finely grated
lemon zest
1 teaspoon ground coriander
1 tablespoon vegetable
or olive oil
4 bread rolls, split, toasted
½ cup light hummus, plus
extra, to serve (optional)
40g baby rocket leaves
2 tomatoes, sliced

1 Combine the mince,
breadcrumbs, parsley, onion,
zest and coriander in a bowl.
Shape into 4 patties. Heat
oil in a large frying pan over
moderate heat. Cook patties
for 5 minutes each side or
until cooked.

2 Spread both halves of each
roll with hummus. Place rocket,
a patty and tomato on one half
of each roll. Top with remaining
bread. Serve burgers with extra
hummus (if using).

500g all-rounder potatoes
(such as desiree), cut into
1.5cm pieces
2 teaspoons vegetable or olive
oil, plus 1 tablespoon extra
3 cured chorizo sausages,
coarsely chopped
1 onion, thinly sliced
½ savoy cabbage, shredded
4 eggs, at room temperature
4 slices sourdough bread,
chargrilled
2 tablespoons chopped
flat-leaf parsley, to serve


1 Cook potato in a saucepan of
boiling water for 5 minutes or
until tender. Drain.


2 Heat oil in a large frying pan
over high heat. Cook and stir
sausage for 2 minutes or until
browned. Add the potato and
onion to pan; cook and stir for


3 minutes or until browned.
Add cabbage; cook and stir
for 2 minutes or until the
cabbage wilts.

3 Meanwhile, heat extra oil in
a large frying pan over moderate
heat. Pan-fry eggs for 2 minutes
or until cooked to your liking.

4 Place bread on plates.
Top with chorizo mixture
and an egg. Serve sprinkled
with parsley.
