Granola
Cups with
Coconut
Yogurt
and Fruit
Makes
12
ingredients
¾ cup coconut milk
¾ cup coconut sugar
2½ cups oats
½ cup buckwheat
¼ cup chopped pecans
¼ cup coconut chips
1 tbsp chia seeds
½ cup puffed rice
2 tbsp buckwheat flour
Pinch of sea salt and
vanilla powder
9 oz coconut yogurt
Fruit of your choice
(berries, passion fruit,
kiwi, banana)
method
Preheat your oven to
350°F/175°C.
Heat up the coconut milk
and add in the coconut
sugar, vanilla powder and
sea salt. Let dissolve.
Combine all dry ingredients
in a bowl and add in coconut
mixture.
Mix well, until everything
is coated, and let sit for 5
minutes.
Press firmly into the cups
of a muffin tin. (Tip: cut
parchment paper into
strips and put one in each
cup—it will be easier to get
the granola cups out later.)
bake for 25 minutes, or
until golden brown, and
let cool completely.
Spoon some coconut
yogurt into each granola
cup and garnish with
some fruit.
