ingredients
2 generous cups fresh basil
½ cup water
¼ cup raw cashews, soaked
for 20 mins
2 tbsp nutritional yeast
1 clove fresh garlic
Squeeze of fresh lemon juice
2 large zucchini
1 cup cherry tomatoes

method
blend all ingredients (except
for tomatoes and zucchini)
until smooth.

Spiralize zucchini and slice
tomatoes in half.

Mix pesto through the pasta
and top with tomatoes. Enjoy!
