Savoury Mince
SERVES 2 PREP 10 minutes
COOK 30 minutes

1 tablespoon vegetable or olive oil
400g pork mince
1 onion, finely chopped
1 clove garlic, crushed
35g sachet chilli spice seasoning mix
400g can diced tomatoes
1 cup boiling water
1 small beef stock cube, crumbled
420g can red kidney beans, rinsed
2 cups cooked white long-grain rice
2 tablespoons coriander leaves

1 Heat oil in a large frying pan over
moderate heat. Add mince, cook, stirring
to break up lumps, for 5 minutes or until
browned. Transfer to a heatproof bowl.

2 Add the onion to pan; cook and stir for
2 minutes or until soft. Add garlic and
seasoning mix; cook and stir for 30 seconds
or until fragrant. Stir in tomatoes, boiling
water, crumbled stock cube and kidney beans.

3 Return mince to pan; stir to combine.
Bring to the boil. Reduce heat; simmer,
uncovered, for 20 minutes or until
thickened. Reserve half the savoury
mince and 1 cup of the rice.

4 Serve remaining savoury mince
with rice, sprinkled with coriander.

Nacho-coated
Cheese Balls
with Lime Yoghurt
SERVES 2 PREP 15 minutes
COOK 20 minutes

Reserved cooked rice (see Savoury Mince
recipe, above)
Reserved Savoury Mince (recipe, above)
1 egg, lightly whisked
50g nacho cheese corn chips, crushed
Cooking oil spray
½ cup Greek-style natural yoghurt
1 teaspoon finely grated lime zest
1 tablespoon lime juice
2 tablespoons chopped flat-leaf parsley
(optional)
Lime wedges, to serve

1 Preheat oven to 220ºC/200ºC fan-forced.
Grease and line an oven tray with baking
paper. Combine the reserved rice, reserved
savoury mince and egg. Roll ¼-cup portions
of mixture into 6 balls. Coat in corn chips.
Place on prepared tray. Spray with oil.

2 Bake for 20 minutes or until heated and
golden brown. Whisk the yoghurt, zest and
juice in a bowl. Sprinkle cheese balls with
parsley (if using). Serve with lime yoghurt
and lime wedges.
