415g can pink salmon, drained,
flaked, bones and skin
discarded
500g bought mashed potato
⅔ cup dried packaged
breadcrumbs,
plus 1 cup extra
2 eggs, lightly whisked
1 green onion, thinly sliced,
plus 1 extra
2 tablespoons vegetable
or olive oil
½ cup reduced-fat mayonnaise
½ tablespoon smoked paprika
½ bunch watercress,
leaves picked
2 oranges, segmented
Lemon wedges, to serve


1 Combine salmon, mashed
potato, breadcrumbs, egg and
onion in a bowl. Shape mixture
into 8 patties. Place extra
breadcrumbs on a large flat


plate. Press patties into
breadcrumbs to lightly coat.

2 Heat oil in a large non-stick
frying pan over moderate heat.
Cook patties, in batches, for
2 minutes each side or
until golden brown. Whisk
mayonnaise and paprika
in a bowl.

3 Arrange watercress, orange
and extra onion on serving
plates. Top with patties. Serve
with mayonnaise mixture and
lemon wedges.

400g chicken mince
½ cup dried packaged
breadcrumbs
¼ cup finely chopped flat-leaf
parsley
2 green onions, thinly sliced
1 teaspoon finely grated
lemon zest
1 teaspoon ground coriander
1 tablespoon vegetable oil
4 Turkish bread rolls, split,
toasted, to serve
½ cup light hummus,
plus ½ cup extra, to serve
60g baby rocket leaves
2 tomatoes, sliced

1 Combine the mince,
breadcrumbs, parsley, onion,
zest and coriander in a bowl.
Shape into 4 patties.

2 Heat oil in a large frying pan
over moderate heat. Cook

patties for 3 minutes each side
or until browned and cooked.

3 Place bread roll bases on
serving plates. Top with half
the hummus, the rocket, a patty
and tomato. Top remaining
bread with the remaining
hummus. Serve burgers with
extra hummus.
