TURN SOUP


INTO SUPPER
Just as I was about to add another layer
of clothing to stop my teeth from
chattering, a delivery arrived... It was the
most amazing selection of heat-and-eat
soups. I felt instantly warmer as I headed
to the kitchen to warm up a sachet of
Pitango soup. All Pitango Soup sachets
are gluten-free, have four serves of vegies
and come in flavour combos such as
Free-range Spring
Lamb, Carrot &
Sweet Potato and
Pumpkin & Ginger.

Baked Chicken with
Carrot & Sweet Potato
500g chicken thigh fillets + 3 teaspoons
ground cumin + 1 tablespoon light
olive oil + 1 onion, thinly sliced
+ 1 carrot, finely chopped + 2 cloves
garlic, crushed + 600g sachet Pitango
Carrot & Sweet Potato Soup
+ 2 tablespoons chopped coriander
+ Prepared couscous, to serve
Preheat oven to 200ºC/180ºC
fan-forced. Sprinkle chicken all over
with ground cumin. Heat oil in a large
ovenproof frying pan over moderate
heat. Add chicken; cook for 1 minute
each side or until browned. Transfer
to a heatproof plate. Add onion, carrot
and garlic to pan; cook and stir for
2 minutes or until carrot is just tender.
Add soup. Bring to the boil. Reduce
heat. Add chicken to pan. Cover; bake
for 10 minutes or until chicken is
cooked. Sprinkle with coriander.
Serve with couscous. Serves 4
