ice cubes
Ice-cube trays make awesome
mortars for leftover herbs.

#1 You can use up leftover herbs by
picking them and placing them into
ice-cube trays, then covering them
in olive oil, using a ratio of one part
herbs to three parts oil. Put them
in the freezer, and each time you
need oil for cooking, pop out a
cube and use that in its place for
some herb-infused oil. You can use
these cubes straight from frozen
into a medium-hot frying pan.
#2 Make herb or garlic butter by
mixing excess butter with herbs
and seasoning and placing it into
ice-cube trays for use at a later date.
#3 Use leftover mint to make fruity
ice cubes. Simply spread individual
berries, such as blueberries,
raspberries or blackberries, into the
trays with a sprig of mint, and top
up with water. They look lovely in a
jug of water or a glass of fresh juice.

Make a
room spray
When you don’t have fresh flowers
but wish your house smelled like
them, try making your own scented
spray. Play around with the scents
to your liking.

ROSEMARY, SAGE
AND LAVENDER
AIR FRESHENER
Makes 500ml
2 sprigs rosemary
sprig of sage
tsp lavender
1 lemon, sliced
500ml water
a 500ml spray bottle

Put all the ingredients into a small
saucepan. Bring to a simmer over
a medium heat, cover and let it
simmer for a further 5 minutes. Let
it cool, then strain the liquid and
pour it into a spray bottle. You can
add a fresh sprig of rosemary to
infuse in the bottle, if you wish. If
the sprig is too tall for the bottle,
just break it in half. This will store
for up to a year and you can use it
as often as needed.

This is an invigorating
and floral air
freshener – not
sickly or fake
smelling, more like
your nana’s garden
in spring. Rosemary
and lavender go
together perfectly.
