Watermelon-Tomato Cooler
SERVES 4|
ACTIVE 25 MIN. - TOTAL 6 HOURS, 25 MIN.


Process 6 cups cubed seedless watermelon;
3 cups red heirloom tomatoes, seeded
and chopped (about 1½ lb.); 2 Persian
cucumbers, peeled and sliced; and ¼ cup
granulated sugar in a blender until very
smooth, about 1 minute, stopping to
scrape down sides as needed. Pour mixture
through a fine wire-mesh strainer lined with
cheesecloth into a large pitcher; discard
solids. Stir in ¼ cup fresh lime juice (from
about 2 limes); ¾ to 1 cup tequila or vodka;
and, if desired, 1 small jalapeño chile, sliced.
Chill until very cold, about 6 hours. Stir
well, and serve over ice. Garnish with
cucumber or watermelon wedges and
fresh cilantro sprigs.

Carrot-Ginger Beer
SERVES 4|
ACTIVE 15 MIN. - TOTAL 2 HOURS, 45 MIN.

Combine 1 cup water, ½ cup packed
dark brown sugar, and 6 large mint sprigs
in a small saucepan. Bring to a boil over
medium-high, stirring just until sugar is
dissolved. Remove from heat, and cool
completely (about 30 minutes). Discard
mint sprigs. Combine mint syrup, ½ cup
cold-pressed carrot juice, and ¼ cup
fresh lime juice (from about 2 limes)
in a pitcher, and chill until very cold,
about 2 hours. For each serving, pour
6 Tbsp. of the mixture over ice in a
12-oz. glass, and stir in 3 Tbsp. spiced
rum. Top each with ¾ cup chilled ginger
beer. Garnish with mint sprigs and
shaved carrots.

Cherry-Basil Fizz
MAKES 8 SERVINGS|
ACTIVE 20 MIN. - TOTAL 3 HOURS, 20 MIN.

Combine 2½ cups fresh pitted cherries,
1 cup granulated sugar, ¼ cup water, and
3 large basil sprigs in a medium saucepan.
Bring to a boil over medium-high, stirring
until sugar is dissolved. Remove from
heat, and cool completely (about 1 hour).
Pour syrup through a fine wire-mesh
strainer into a pitcher, discarding solids.
(Yield should equal about 1 cup.) Cover and
chill until very cold, about 2 hours. For each
serving, pour 2 Tbsp. of the syrup over ice
in a 12-oz. glass, and stir in 3 Tbsp. vodka.
Top each with about 1 cup plain, chilled
kombucha (like GT’s Classic Organic Raw
Kombucha, original flavor). Garnish with
cherries and basil sprigs. Â
