DIRECTIONS
1.Heat a medium
saucepan on medium-
high heat and add olive
oil and butter. Season
steakwithsaltand
pepper and add to pan.
Sear on each side
and cook until desired
doneness. Transfer to
aplateandletcoolfor
10 to 15 minutes before
slicing diagonally
against the grain.

INGREDIENTS
1tbspoliveoil
1tbspgrass-fedbutter
115g grass-fed lean steak
Salt and black pepper,
to taste
4 spears asparagus
2tbspgoatcheese
3tbspGreekyoghurt
½tspdriedrosemary
½tspdriedthyme
2 slices sprouted-grain
bread
water. Add asparagus
and blanch for 3 to
4 minutes.
- In a small bowl,
combine goat cheese,
yoghurt, rosemary and
thyme. Spread mixture
on each slice of bread. - Add steak slices on
one slice of bread, add
asparagus, then top
with other slice of
bread. Lightly drizzle
olive oil on outside of
sandwich. Press in
a panini maker, or toast
in a cast iron frypan
and apply pressure
with a spatula to make
it panini-like.
