1/ Portobellos
lend meatiness.
Roast ’em with
grapeseed oil,
sesame oil and
tamari, then
serve in a fresh
lettuce wrap.
2/ Marcona
almonds give a
little crunch and
protein, and their
plump shape can
help to fill gaps
on the board.
3/ Radishes
are crisp and
colourful, so
max out – slice

French radishes
into lengths and
circles, then throw
in a few whole
traditional ones.
4/ Shishito
peppers add salty
heat. Blacken in a
pan; toss with sea
salt and tamari.
5/ Fig preserves
have a slight
sweetness and
complex texture.
Dip everything
in them for a
flavour boost!

BREAK AL DESKO


Blueberry muffin
In a ramekin, whisk 2 tbs coconut
flour, a splash of milk and 1 egg into
a smooth batter (add extra milk if
needed). Stir in ½ cup blueberries
and microwave on high for 2 mins.
Overnight oats
In a small bowl, mash a ripe banana
then mix in ⅓ cup rolled oats, ½ cup
almond milk, 100g natural yoghurt,
1 tbs each tahini (or nut butter)
and chia seeds, plus a sprinkle of
cinnamon. Cover and leave in the

fridge overnight, ready for morning.

add milk and microwave. Easy.
Super-quick omelette
Crack 2 eggs into a large mug
and beat well. Add ½ cup chopped
cherry tomatoes, a handful
chopped spinach, 1 chopped
spring onion and 1 tbs grated
cheese. Microwave on high for
2 mins and you’re good to go.
