RICE CAKES WITH
AVOCADO SMASH
MAKES 1 SERVE
3 rice cakes
25g avocado
40g tinned cannellini beans
30g low-fat salt-reduced feta
Sea salt and pepper
MAKES 1 SERVE
60 g rolled oats
125 ml low-fat milk
50 g low-fat plain
yoghurt
1 tsp maple syrup
1 tbsp cacao
powder
2 tsp chia seeds
80 g frozen
raspberries
Cacao nibs,
to garnish
1/ Place the oats, milk,
yoghurt, maple syrup,
cacao powder, chia
seeds and most of the
raspberries in a bowl
and mix until combined.
2/ Pour the oat mixture
into a bowl or jar. Cover
with plastic film and
place in the refrigerator
to chill overnight.
3/ To serve, stir and top
with remaining rasp-
berries and cacao nibs.
