Take time out for a cuppa and
a crunchy sweet treat

Coffee & White Chocolate Biscuits
MAKES 30 PREP 15 minutes + cooling COOK 15 minutes
NUTRITION 987kJ; 7g fat (2g sat); 2g protein;
14g carbohydrate; 1g fibre a serve COST 80¢ each

3 teaspoons instant coffee granules
3 teaspoons hot water
180g butter, at room temperature
½ cup firmly packed brown sugar
½ cup sweetened condensed milk
1¾ cups self-raising flour
100g white cooking chocolate, finely chopped,
plus 80g extra, melted

1 Preheat oven to 180ºC/160ºC fan-forced. Grease and line
2 oven trays with baking paper. Dissolve coffee in the hot
water. Using an electric mixer, beat butter and sugar in
a large bowl until pale and creamy. Beat in coffee mixture
and condensed milk. Sift flour over the butter mixture.
Add chopped white chocolate; mix well.

2 Roll level tablespoons of mixture into balls. Place on prepared
trays about 5cm apart. Flatten tops slightly. Bake for 12 minutes
or until biscuits are lightly browned. Cool completely on trays
(biscuits will firm). Drizzle the extra melted white chocolate
over biscuits. Allow to set.
