Smart tarts

Mini Lemon
Meringue Pies
MAKES 12 PREP 10 minutes
COOK 20 minutes COST $1.10 each

12 sweet pastry tart cases
350g jar lemon curd
2 egg whites
½ cup CSR caster sugar
1 teaspoon vanilla essence

1 Preheat oven to 180ºC/160ºC fan-forced.
Place tart cases on an oven tray.
Bake for 8 minutes or until lightly
coloured. Cool slightly.

2 Spoon lemon curd into tart cases.
Using an electric mixer, beat egg whites
in a medium clean, dry bowl until soft
peaks form. Gradually add sugar, beating
well after each addition, until sugar
dissolves and mixture is thick and glossy,
and firm peaks form. Beat in essence.

3 Using a piping bag fitted with a 1cm plain
piping nozzle, pipe meringue over curd.
Bake for 8 minutes or until golden.

+ MINI ORANGE MERINGUE PIES


Omit lemon curd. Use orange
curd instead.
+ MINI JAM MERINGUE PIES
Omit lemon curd. Use strawberry
jam instead.
+ MINI COCONUT MERINGUE
PIES Omit vanilla essence. Add
2 tablespoons toasted desiccated
coconut instead.
