Chocolate beetroot energy bites

Makes 25 | Prep 15 mins | Cook none | Calories 45 (per bite)

75g (2¾oz)
precooked beetroot
100g (3½oz) pitted dates,
2 tbsp nut butter
1 tbsp honey or
maple syrup
75g (2¾oz) gluten-
free rolled oats
3 tbsp cocoa or
protein powder
1 tsp vanilla extract
a pinch of salt

COATING OPTIONS
mixed seeds, desiccated
coconut, cocoa powder

1 Grate the beetroot into a sieve and leave for a few
minutes to drain.
2 Whizz the dates, nut butter and honey into a smooth
paste in a food processor. Add the oats, cocoa or protein
powder, vanilla extract and salt and blend until smooth
and thick. Shape into teaspoon-sized balls and roll in your
desired coating. Place in the fridge for 10-15 minutes to
firm up.
