Cheesy pea sloppy joes
SERVES 4 HANDS-ON 15 min
HANDS-OFF 20 min

INGREDIENTS


250 g sugar snap peas
2 tbsp olive oil
1 onion, peeled and chopped
½ cauliflower, broken into florets
½ cup cream
1 ½ cups grated mozzarella
4 burger rolls, toasted, to serve

METHOD



  1. Preheat oven to 180°C.

  2. Toss the sugar snap peas with
    olive oil, and season with salt and
    pepper. Arrange on a baking tray
    and bake for 15–20 minutes,
    until crispy.

  3. Heat a little oil and fry the
    onion until soft.

  4. Add the cauliflower and fry
    for 10 minutes, until softened.
    5. Add the cream and bring to
    a simmer. Cook for 10 minutes.
    Add 1 cup mozzarella.
    6. Use a stick blender to blitz until
    the sauce is smooth. Season with
    salt and pepper.
    7. Pile the sugar snap peas on to a
    toasted roll and top with the cheese
    sauce. Sprinkle with the remaining
    grated mozzarella.
