RINSE

Give your fresh
produce a good
rinse with this DIY
solution. All you
need is some
vinegar.

  1. Rinse your fruit
    and veggies.

  2. In a bowl, mix
    4 cups water with
    1 cup vinegar.
    3. Soak leafy
    greens and berries
    for 5 minutes; any
    produce with thick
    skins (apples and
    squash) for
    10 minutes.

  3. Rinse again
    and get cooking!

HOw dO I kNOw wHETHER THE fRESH
pROduCE IS aCTually fRESH?
It’s simple: tune into the basic
senses of smell, touch and sight.
Fruit shouldn’t be too soft or too
hard, and the surface should be
mostly smooth and even. If you
feel any pits and dents under the
surface, the flesh has probably
been damaged in transit, or is
slowly rotting. A light sweet
smell is a good indicator that
it is fresh and ripe.
For your leafy green veggies
such as lettuce and kale, look
for firm, crisp, plump leaves that
are consistently coloured. A bit
of brownness and a few tears
in the leaves can be expected,
due to shipping or handling.

HOw dO I gO abOuT waSHINg
my faRm-fRESH pROduCE? waIT,
IS waSHINg EvEN NECESSaRy?
Yes! It is a preventative action
to avoid ingesting bacteria. The
best way to kill all bacteria is by
cooking food at 135°C, but that
isn’t possible for all produce. For
the fruit and veggies you eat raw,
rinsing will do the trick. If the
produce is hard to clean, use
a brush, cloth or sponge to rub
off the dirt.
When preparing fresh produce,
ensure your cutting boards and
knives are completely clean, as
bacteria from yesterday’s food
can contaminate today’s.

IS ORgaNIC pROduCE bETTER
fOR yOu?
Some studies suggest that it is
healthier for you. This is partly
because plants have a higher
nutritional value, and partly
because they are not tainted by
toxic chemicals. Without any
pesticides and fertilisers, the
plants produce antioxidants
to naturally strengthen their
resistance to bugs and weeds.
If buying organic from the
supermarket does not fit into
your budget, try growing your
own fruit and veg, or buy your
produce at a local market.
