For how long and
at what oven
temperature should I roast
a piece of rump? I want it
cooked to medium.

Remove meat from the fridge about 20
minutes before cooking to take the chill
off, which helps it cook more evenly. Brush all
over with oil and season with salt and pepper.
Place on a rack in a roasting pan. Cook in a hot
oven (200C) for 20-25 minutes per 500g. Once
cooked, remove roast from oven, cover
lightly with foil and allow to rest
for 10-15 minutes so juices can
redistribute through the meat
for a tender result.

Cheesy Pesto Chicken
with Mash
4 x 200g chicken breast fillets
(^1) / 3 cup basil pesto dip
150g shaved leg ham
4 slices Swiss cheese (80g), halved
60g baby rocket leaves
2 tblsps balsamic salad dressing
Cracked black pepper, to garnish
MASH
800g brushed potatoes, peeled,
washed, chopped
50g butter, chopped
Salt and pepper, to taste
1 To make mash, cook potatoes in a large
saucepan of boiling water until tender.
Drain. Return to pan. Coarsely mash. Add
butter. Stir until melted. Season with salt
and pepper. Cover to keep warm.
2 Meanwhile, place each chicken fillet
between two sheets of baking paper.
Gently pound with a meat mallet to slightly
flatten to an even thickness. Season with
salt and pepper.
3 Heat an oiled, large, non-stick frying
pan over a medium to high heat. Add
chicken. Cook for about 4 to 5 minutes
on each side, until just cooked through.
4 Transfer to an oven tray. Spread each
fillet with 1 tblsp pesto. Top with ham,
then cheese.
5 Cook in a very hot oven (220C) for
about 3 minutes, or until cheese is melted.
6 Meanwhile, toss rocket with dressing
in a bowl.
7 Garnish chicken with cracked black
pepper. Serve with rocket and mash.

TIP
We used a basil
pesto, pecorino and
cashew dip. You can
replace it with pizza
sauce or semi-dried
tomato pesto.
