Mini upside down
baked cheesecakes
Simply turn your little
cheesecakes upside down
to reveal a charming
snowflake pattern.

CHRISTMAS TREATS


MINI UPSIDE DOWN
BAKED CHEESECAKES
Preparation time 15 mins plus
3 hours 30 mins chilling
Cooking time 15 mins
Makes 6

Cooking oil spray, to grease
125g Granita biscuits
75g unsalted butter, melted
1 tsp vanilla extract, plus extra 1 tsp
½ tsp ground cinnamon
250g block cream cheese,
chopped, softened

¼ cup caster sugar
¼ cup sour cream
1 free-range egg
Silver cachous, to decorate

STEP 1 Preheat oven to 180°C fan-
forced (200°C conventional). Grease
a 6-hole festive cakelet pan with
cooking oil. Put it on an oven tray.
STEP 2 Put biscuits, butter, vanilla
and cinnamon in the bowl of a food
processor and process until fine
crumbs form. Push biscuit mixture
into holes, and smooth surface
using the back of a teaspoon.
STEP 3 Put cream cheese and sugar
in the bowl of an electric mixer.
Using paddle attachment, beat
on high until well combined. Add
sour cream and extra vanilla and
beat until combined. Add egg and
beat on low until just combined.
STEP 4 Spoon cream cheese mixture
into holes on top of biscuit base,
and smooth the surface. Bake for
15 mins until just set. Remove
from oven and set aside for 15
minutes before chilling in pan for
3 hours to cool completely.
STEP 5 Just before serving, transfer
the cheesecakes to the freezer for
15 minutes to set bases firmly
to make removal easy. Carefully
turn out. Set aside for 15
minutes before serving. Serve
garnished with silver cachous.

LARGE BAKED CHEESECAKE
To make a Large baked cheesecake,
follow Steps 1-4 of Mini upside
down baked cheesecakes, greasing
a 20cm round spring-form tin with
cooking oil spray and lining base and
sides with baking paper. Push biscuit
mixture into base of tin, spoon cream
cheese mixture over, then bake for
25 minutes. Serve topped with 150ml
whipped thickened cream, garnished
with a milk chocolate snowflake and a
dusting of icing sugar. To make, melt
50g chocolate and pipe a snowflake
pattern onto a piece of baking paper.
Allow to set for 1 hour in the fridge.
