Make Christmas-themed finger
food to get your party started

CHRISTMAS TREATS


CHEESE BISCUITS
Preparation time 20 mins
Cooking time 25 mins
Makes 12

Cooking oil spray, to grease
1 cup plain flour, plus
extra for dusting
½ tsp fine salt
125g unsalted butter, chopped,
at room temperature
35g parmesan, finely grated
30g cheddar, coarsely grated

STEP 1 Preheat oven to 160°C fan-
forced (180°C conventional). Grease
a 6-hole festive cakelet pan with
cooking oil. Put it on an oven tray.
STEP 2 Put flour, salt, butter,
parmesan and cheddar in the bowl
of a food processor and pulse until
mixture comes together into a ball.
Transfer to a lightly floured surface.
STEP 3 Spoon 1 Tbsp of dough
into each of the holes, press down
firmly and smooth the surface.
STEP 4 Bake in preheated oven for 12
minutes or until golden. Cool biscuits
in pan for 10 minutes, then turn out.
STEP 5 Repeat Steps 3–4.
STEP 6 Serve biscuits on
a cheese platter.

CHEESE AND HERB BREAD
Preparation time 15 mins
Cooking time 1 hour
Makes 12

Cooking oil spray,
to grease
2 cups shredded tasty cheese
3 cups plain flour
1 tsp fine salt
1 Tbsp baking powder
2 tsp dried Italian herbs
250ml thickened cream
½ cup sour cream

1 free-range egg
125ml water
3 Tbsp melted butter

STEP 1 Preheat oven to 180°C fan-
forced (200°C conventional). Grease
a 6-hole festive cakelet pan with
cooking oil. Put it on an oven tray.
STEP 2 Sprinkle ½ cup of the
cheese among the prepared
holes, pressing down slightly.
STEP 3 Combine flour, salt, baking
powder and dried herbs in a large
bowl. Add 1 cup of the cheese
and toss to coat using a fork.
STEP 4 In a separate bowl, whisk
together the cream, sour cream, egg
and water. Add to dry ingredients and
stir gently, then add melted butter,
mixing until just combined. Batter
will be lumpy. Divide batter in half.
STEP 5 Spoon one half batter evenly
among pan holes, set remaining batter
aside covered with plastic wrap.
STEP 6 Grease your finger tips
with olive oil and flatten out the
batter in the pan holes. Bake for
30-35 minutes until golden brown.
Remove pan from oven, loosen the
bread slightly then turn it out.
STEP 7 Re-grease pan holes with
cooking oil and repeat Steps 2, 5 and
6 with remaining cheese and batter.
Serve warm or at room temperature.

SWEET POTATO FRITTATAS
Preparation time 20 mins
Cooking time 20 mins
Makes 6

Cooking oil spray, to grease
1 Tbsp extra virgin olive oil
125g chorizo, finely diced

(^1) / 3 cup finely diced sweet potato
4 free-range eggs
¼ cup milk
¼ cup coarsely grated cheddar
2 green shallots, thinly sliced
Sea-salt flakes and freshly ground
black pepper, to season
Micro herbs, to garnish
Tomato relish, to serve
STEP 1 Preheat oven to 200°C fan-
forced (220°C conventional). Grease
a 6-hole festive cakelet pan with
cooking oil. Put it on an oven tray.
STEP 2 Heat oil in a large non-stick
frying pan over medium heat. Cook
chorizo and sweet potato, stirring, for
5 minutes or until golden. Transfer
to a paper towel-lined plate. Set
aside for 5 minutes to cool.
STEP 3 Whisk eggs and milk in a large
jug. Stir in sweet potato, chorizo,
cheese and shallots. Season.
STEP 4 Pour mixture into holes. Bake
for 16 mins or until egg is set. Garnish
with micro herbs and serve with relish.
