Sweet potato frittatas

4 quickies with the festive cakelet pan


1 Create pretty chocolate discs by
spooning 25g melted chocolate into
each hole then refrigerate until set hard.
2 Set herbed butter in the pan to
make festive pats. Beat 125g softened
butter in a large bowl until smooth,
stir in chopped herbs and spoon
into holes, pushing down firmly to
get into the grooves. Refrigerate
for six hours or overnight, then
turn out and serve with bread.

3 Make pretty iceblocks by
putting slices of lemon or a couple
of edible flowers into each hole, fill
with water and freeze overnight.
Handy to use in punch, or a jug
of water to keep it icy cold.
4 Freeze softened ice-cream in
the pan overnight for a decorative
dessert, then turn out onto a
chilled plate to serve, decorated
with strawberries or other fruit.
