Goat’s cheese puffs

- 1 sheet puff pastry,thawed
- 150g goat’s cheese,sliced into
16 rounds - ¼ cup chopped pistachios
- 1 tablespoon thyme leaves
- honey , to drizzle

Preheat oven to hot, 200°C. Line
an oven tray with baking paper.

Using a 6cm round cutter, cut
16 rounds from pastry. Arrange
on tray and prick with a fork. Top
each with a slice of goat’s cheese.
Sprinkle with pistachio and thyme.
Season with pepper.

Bake for 8-10 minutes, until
pastry is puffed and crisp.
Drizzle with honey and cool.
