Black cherry


friands


aMAKES 9 • PREP
15 MINS • COOK 25 MINS



  • 11 / 3 cups icing sugar, sifted

  • 1 cup almond meal

  • ²/³cupplain flour, sifted

  • 5 eggwhites,lightly
    whisked (see tip)

  • 1 teaspoon vanilla extract

  • 185g butter,melted

  • 18 fresh pitted fresh cherries
    or400g can pitted black
    cherries, drained

Preheat oven to moderate,
180°C. Lightly grease
9 recesses of a friand pan.

In a large bowl, combine
icing sugar, almond meal
and flour. Mix in eggwhites
and vanilla. Pour in melted
butter, discarding white solids
in base of saucepan. Stir
mixture until well combined.

Spoon mixture evenly
into recesses. Press
2 cherries into each friand.
Bake for 20-25 minutes,
until golden and cooked
when tested.

Cool in pans for
5 minutes before turning
onto a wire rack to cool
completely. Store in an
airtight container. Dust
with icing sugar to serve.



  • 2 cups plain flour
    -^1 / 3 cup pure icing sugar

  • 2 tablespoons rice flour

  • 250g butter,cubed (see tip)

  • 60g dark chocolate,melted

  • ½ cup flaked almonds

Preheat oven to moderately slow,
160°C. Line 2 oven trays with
baking paper.

Sift flour, icing sugar and rice flour
together into a bowl.

Rub in butter using fingertips,
until mixture resembles
breadcrumbs. Add chocolate. Press
mixture together to form a firm dough.
Wrap in plastic wrap and chill in
freezer for 10 minutes.

Turn out onto a lightly floured
surface. Knead gently. Roll heaped

tablespoons of mixture into sausage
shapes. Form into horseshoe shapes.
Arrange on trays. Press almonds
onto biscuits.

Bake for 15-20 minutes, until firm
and cooked through. Cool on trays
for 5 minutes before transferring to
a wire rack to cool completely. Store
in an airtight container.

It’s best to just
use fingertips to rub
in butter, to avoid
melting. Butter should
be firm and cool, but not
straight from the fridge,
to make rubbing
in easier.

4 Other fruit of choice
can be used.
4 Only whisk eggwhites
lightly to combine – they
should just be lightly
frothy.
