INGREDIENTS




1 packet lite fi rm or extra fi rm tofu
(Mori Nu)
⅓ cup maple syrup or sweetener
of choice
2 tbsp fresh lime juice
Zest of 1 lime



METHOD





  • Blend the tofu, lime juice, zest and sweetener till smooth.
    Keep smoothing down the sides of the blender as you
    mix.

  • Pour into the container you want to serve it in.

  • Refrigerate till chilled.

  • Use as dessert, topping or frosting.


Ann Esselstyn is the creator of many tasty and healthy heart attack proof recipes (as she calls them). You can fi nd
them all in Dr. Esselstyn’s book ‘Prevent and Reverse Heart Disease’. She is the wife of Dr. Caldwell Esselstyn Jr
and we share recipes all the time. Ann advised me on my diet changes when I (Anuradha) was diagnosed with a
high lipid profi le. I would email her regularly to ask for advice on what to eat and she was always kind enough to
fi nd time to respond. Now, I give her any oil-free recipe I have developed, and she tries them out and gives me
her comments. I taught her how to make masoor dal with an onion tadka as well as lauki (bottle gourd) with saunf
(fennel seeds). She shared this dessert recipe saying, “Esselstyn and I love this lime mousse, especially when it is
hot. And since it is always so hot in India, I thought you would enjoy this! It is delicious alone, topped with fruits
or even as frosting on cakes. It is fast to make at the last minute. Use more or less lime according to taste. It is
especially beautiful in a lime glass with fresh raspberries and sprinkled with mint!” So go ahead – indulge!


Mori Nu tofu is a type of tofu available in diff erent textures and fi rmness, lite, silken, fi rm, extra fi rm and can be
found in any supermarket which sells tofu. You don’t need to refrigerate it till it is opened.
