Barbecued turmeric
fish tacos with corn
& chilli salad

150g peeledpineapple, diced
1 smallyellow capsicum,
deseeded, diced
100gyellow grape tomatoes,
quartered
1 long red chilli, deseeded,
finely chopped
¼ cup choppedcoriander,
plus extra, to garnish
1 tablespoonlime juice,
pluslime wedges, to serve

4 x 150g fi rm white fi sh fi llets
1 teaspoon turmeric
1 large corn cob, husk
and silks removed
8 gluten-free corn tortillas
60g baby rocket
½ cup reduced-fat plain
yoghurt

1 Combine the pineapple,
capsicum, tomatoes, chilli,
coriander and lime juice in
a medium bowl. Set aside.
2 Preheat a chargrill pan or
a barbecue hotplate over
medium-high heat. Dust fi sh
fi llets with turmeric. Spray fi sh
and corn with olive oil. Grill corn,

turning, for 8 minutes,
or until tender. Cook fi sh
for 2 minutes each side,
or until cooked through.
Gently warm the tortillas
until lightly charred.
3 Carefully cut kernels
from corn cob and add
to pineapple salad. Season
with cracked black pepper.
4 Break fi sh into chunks.
Place 2 tortillas on each
serving plate. Top with a little
rocket, turmeric fi sh, roasted
corn salad and a dollop of
yoghurt. Garnish with extra
coriander and serve with a
wedge of lime on each plate.
