YOGHURT BOWLS
WITH BEER-
CHOCOLATE SAUCE
SERVES 4
½ cup Guinness or other stout
¼ cup brown sugar or coconut sugar
¼cupunsweetenedcocoapowder
1½ tsp coffee powder
1 tsp vanilla extract
Salt, to taste
60g dark chocolate (60–70% cocoa), chopped
2cupsplainlow-fatGreekyoghurt
1cupraspberries

1.In a small saucepan, whisk together beer,
sugar, cocoa powder, coffee powder, vanilla
andapinchofsalt.Bringtoaboil,then
reduce heat to low and simmer for
5 minutes, stirring often.
2.Remove from heat and stir in chocolate
until completely melted. (If allowed to cool,
warm for about 30 seconds in the microwave
to re -melt.)
3.Place yoghurt in 4 serving bowls and top
with chocolate sauce and raspberries.

BEER-STEAMED


MUSSELS


SERVES 4

2tspoliveoil
1onion,chopped
2garliccloves,thinlysliced
1 cup amber or lager beer
2(400g)canstomatoes
Juice of ½ lemon
¼tspredchilliflakes
¼tspsalt
¼tspblackpepper
900g mussels, rinsed
⅓ cup coarsely chopped flat-leaf parsley


1.Heat oil in a large saucepan over medium
heat.Addonionandcookuntilsoftened,about
5minutes.Addgarlicandheatfor1minute.
2.Stir in beer, tomatoes, lemon juice, chilli
flakes, salt and black pepper. Bring to a boil,
reduce heat to medium-low and simmer
uncovered for 10 minutes.
3.Addmussels,coverandraiseheatto
medium. Cook for 5 minutes or until the
shells have popped open. Discard any
musselsthathavenotopened.Stirinparsley.
4.Dividemusselsandbrothamong4serving
bowls. Serve with slices of crusty bread
if desired.
