Here in the Northwest, we love our
salmon, especially my family of
fishermen. Whenever they come
home with fresh-caught salmon, this
crisp, lemony recipe is one of my
favorite ways to use it up.

START TO FINISH: 30 MIN.
MAKES: 4 SERVINGS

1 ¹₂cups soft bread crumbs
2 tablespoons minced fresh parsley
1 tablespoon minced fresh thyme or 1
teaspoon dried thyme
2 garlic cloves, minced
1 teaspoon grated lemon peel
¹₂teaspoon salt
¹₄ teaspoon lemon-pepper seasoning
¹₄ teaspoon paprika
1 tablespoon butter, melted
4 salmon fillets(6 ounces each)

1.Preheat oven to 400°. In a bowl,
combinefirst eight ingredients. Toss with
melted butter.
2.Place salmon in a 15x10x1-in. pan
coated with cooking spray, skin side
down. Top with crumb mixture, patting
gently. Bake until golden brown and fish
just begins to flake easily with a fork,
12-15 minutes.
NOTE To make soft bread crumbs, tear
bread into pieces and place in a food
processor or blender. Cover and pulse
until crumbs form. One slice of bread
yields ½ to ¾ cup crumbs.
PER SERVING 1 fillet: 339 cal., 19g fat
(5g sat. fat), 93mg chol., 507mg sodium,
9g carb. (1g sugars, 1g fiber), 31g pro.
Diabetic Exchanges: 4 lean meat, 1 fat,
½ starch.
