GOLDEN DOOR


PINEAPPLE &
COCONUT WATER
PINA COLADA
SERVES 4
“I love spring; it’s full of such
promise! And along with that
comes the warm weather and
nothing lends itself to those
vibes more than a pina colada.
This is our mocktail of choice
during spring and summer;
it’s so light and refreshing.”
250 ml coconut water
200 g fresh pineapple
Finely grated zest and juice of 1 lime
1 sprig fresh mint (optional)
1 tsp honey (optional)
1 tsp coconut oil
Ice cubes, for serving
Lime wedges and mint
leaves, for garnishing
Place all ingredients in a blender
and blend until smooth. Serve
over ice in a small stemmed
glass. Garnish with a lime
wedge and mint leaf.
