Cauliflower has come a long way since being served up as a side with Sunday roast
covered in bechamel sauce. We’re now seeing it on menus in high-end restaurants with
chefs putting their own spins on the fluffy florets. Cauliflower pizza, anyone? But why is
this debatably bland vegetable such hot property? We talk to experts in the hospitality
and health food industries, including the ‘king of cauliflower’ Eyal Shani, to find out.
