COCOFRIO SUMMER BERRY ICE CREAM CAKE


Nothing makes the team at Cocofrio happier than when the weather gets warmer and summer berries are back in season.
Below is the perfect recipe for both! A summer berry ice cream cake is extraordinarily simple to make.


2 tubs caramel honey
macadamia Cocofrio
2 punnets of blueberries
2 punnets of raspberries
150g macadamias
2 tbsp honey (manuka)
Coconut flakes for dressing


Cocofrio Cake
Get a small cake tray (1 litre) and/
or a 1 litre Tupperware tub.
Line with cling wrap
Place a 3 cm deep layer of Cocofrio
at the bottom of the lined tub and
cover in blueberries and raspberries
Repeat the above step until full
Cover with cling wrap on top and
place in the freezer overnight
Honey-covered Macadamias
Roughly chop macadamias
Place macadamias onto a baking
tray with baking paper

Drizzle with honey
Bake for 5–10 minutes in
1000C pre-heated oven
Flip around the macadamias and
bake again for another 5 minutes
Take out and leave to cool
To D ress:
Take cake out out of the freezer
Place raspberries, blueberries,
coconut flakes and honey roasted
macadamias on top then drizzle
with extra honey and serve.
